This was my first experience creating theme parties. The photo on the left is from my Medieval Night at the Castle. We hired minstrels, knights in armor, and all the staff dressed as if they lived in the 1400s.

Early in my career I was under the tutelage of Chef Zumagala (Zoom) who was catering director for the entire Smithsonian Institute complex. My responsibilities included set-up and cooking for special events for all 17 museums in Washington D.C.

Looking to broaden my cooking portfolio, I worked under Chef Greg Trubee at the prestigious bakery, Fete Accomplie in Washington D.C. The 'Fete' has become a notable catering center in the city, but in my day we worked the pre-dawn hours to push out the delicious breads and pastries that were the keystone of the business.

Sous Chef at the Annapolis Yacht Club
My last position in D.C. was chef for Herb's and the Tucson Cantina restaurants. I moved to Annapolis, Md. to work at the Annapolis Yacht Club, noted for its fine dining menu and beautiful location on the Annapolis Harbor.
